THE GLUTEN FREE BREAD RECIPE OF 20 PEAS
Hello my little kitties!
Today we are going to talk about food! After the place, you probably know that food is the second most important point in a wedding! Feeding all your friends and family with food that represents your personality... was not easy at all! My love is a gourmet and he is very good at cooking so it was a real challenge. I didn't want to have a seated dinner to see our guests spending the night waiting for their dishes, and I think it is very complicated to find a good creative caterer able to organize the perfect dinner... I wanted something good and fun with flavors we all love...
Thanks to Aurelie, our wonderful wedding plannerwe discovered Claire and Jerome and their 20 peas restaurants! It was a lovely surprise and I think they perfectly understood what we wanted: small portions to eat with fingers so that we can try and taste everything! We also knew that the average age would be 35/40 so we though it would be nice to have a burger bar... Beef, chicken, pork, and vegetarian burgers, and gluten free for everyone. It is now very popular to eat "gluten free" but I can assure you that we digest far better with gluten free bread so it is easier to eat a second burger! The size of the burgers was perfect: not too big, not too small, and very tasty... All served with lime and paprika fried sweet potatoes or parsnip fries with Parmesan...
At 20 peasthey do not only make burgers. In their two restaurants, they propose ephemeral menus that change depending on their inspiration and the fresh products deliveries. I recommend them to you if you would like to have an healthy breakfast or if you are looking for a creative caterer for your events!
More than the burgers, they also made some nice little starters:
- Focaccia green tomatoes, mascarpone, basil and pistachios,
- Burrata with parsley and garlic, avocado cream, feta and pecans,
- Courgette/Zucchini with Parmesan,
- Jerusalem artichokes cakes, pecans and rosemay, and so on...
For the dessert, we had a wedding cake but also:
- Cheesecake with homemade jam,
- Chocolate/Orange polenta cake,
- Blackberry and pistachios cake,
- Later on... the waffles machine was working very well!
As they are so adorable at 20 peasthey share with you their burger bread recipe (with or without gluten) that you can do in your own oven; you don't need to use a bread machine!
Recipe for a dozen of burgers:
- - 680g of flour T55 or rice flour (gluten free)
- - 2 tablespoons of organic baking powder (cubes)
- - 4 tablespoons of sugar
- - 2 tablespoons of salt
- - 50g of melted butter
- - 250g of water
- - 200g of milk
- - 4 egg yolks
*EDIT*Preheat your oven at 220°C. In a small bowl, melt the solid backing powder (cube) with a little milk. In another bowl, introduce all the dry ingredients. Then, add into the mixture what you just prepared in the small bowl. Start to knead the dough by hand or with a robot adding progressively the egg yolks. Add butter and water and continue to knead. Add the rest of milk and knead until you obtain an homogeneous mixture. Leave it to cool and put the dough during 1h30 into an oiled bowl covered by a damp cloth. After that, create around 10 small balls that are going to become your burger buns. Leave them to rise for 1h. In a small bowl, mix a little milk and a bit of egg yolk together (if your still have some but it also works without egg yolk). With a silicone brush, paint your buns and put them into the over from 10 to 12 minutes! Enjoy!
